Color gelatin? How interesting it sounds like. Children are mainly fond of this magical ingredient that is called Gelatin. In the past, there were no colors except primary or natural ones to use to color any of the products. Until recently, a natural source of colors has been searched and is clearly used by many food manufacturing industries which use much raw material that help to produce some synthetic colors.
Beta Carotene (natural source of orange) and Turmeric (natural source of yellow) are both water-insoluble. Because they must be water-soluble in dry gelatin mixes, an additional emulsification step is required.
There are two types of coloring used for the base, they are:
Liquid colors are the easiest to use. They either come with a drip dispensing tip or you can use a dripper to add them to the color base.
When using gel colors, mix the color with a few drops of the color base until the mixture is uniform and there are no gel clumps left. When the mixture is smooth, add it to the rest of the color base.
Orange: is a combination of the new technology for Turmeric, with water-soluble vegetable juice that will produce a nice mandarin orange shade.
Yellow is a close match to Red color can be achieved with an Anthocyanin or Beet vegetable juice.
Dark-blue is a Sensient’s Natural Blue at a pH above 3.8 will yield a good replacement for Blue.
Green Lime can be achieved with a combination of either of the above blue options and Sensient’s proprietary Turmeric. The shade intensity depends on the source of blue.
Purple is produced by Anthocyanin sources such as Black Carrot and Purple Sweet Potato or Sensient’s Natural Blue color at a pH below 3.8 will produce a beautiful violet shade.
